Speckle Beef

Speckle Beef is the new kid on the block for cattle breeds in NZ. Speckle Beef cattle are 100% grass fed and are a species that are naturally very high in marbling. They thrive in NZ farming conditions.

The scotch fillet sits between the chuck and the striploin (sirloin) muscles over the back. It is a very tender, moist and flavourful cut of beef. These particular steaks are thick, juicy and delicious!

How to cook: The secret to cooking Speckle Beef beef steaks is to keep things simple, it has the highest natural marbling of all cuts and has a unique grass-fed flavour and texture.  Speckle Beef is at its most tender when the fat melts completely, so we recommend serving it medium rare. Simply season with good quality salt and freshly ground black pepper and cook in a pre-heated, greased pan over a high heat. Sear the steak on each side and check for doneness by the touch test or use a thermometer. Remember to rest the steak for at least five minutes before enjoying this delicacy. If you can wait that long! Serve with creamy potato mash & seasonal fresh vegetables.
