How to cook: Preheat the oven to 180 °C. Rub with oil & season with a homemade or purchased rub (Rum & Que Rib Rocker is good). Place bone side down in oven tray and cover with foil. Roast for 2 hours. Remove from oven, take off foil & pour a BBQ sauce (Rum & Que Char Siu Sauce is delicious) over the top, return to 240 °C oven for 10 minutes to caramelise/brown up. Serve with coleslaw, potato salad and plenty of serviettes!
